Paleo Vegetable Beef Soup

Easiest recipe EVER!
I used the crockpot for this, you could use a big pot on the stove, but this made it so much easier, and what’s better than getting to just put everything into a pot and Forget About It?! (In this photo, I’m eating the soup over some spaghetti squash, btw-That’s why you see it in the photo, but not in the recipe)

 

 

 

 

 

 

 

Ingredients:

  • 1 Onion, diced
  • 1 Cup Carrots, diced
  • 1 Cup Celery, diced
  • 1 Cup Mushrooms, sliced & cut in half
  • 1/2 cup Zucchini, Sliced & cut in half (or cut however you prefer)
  • 1 Cup Napa (or green) Cabbage, sliced
  • 1 Cup, Rinsed, Diced Tomatoes
  • 1/2 Sweet Potato, Diced
  • 1 Cup Green Beans
  • 1 lb. Lean Beef (Grass-Fed, No hormones, additives, etc.)
  • 2 cups low sodium, organic beef broth
  • 2 cups water
  • Spices, of your choice! (I used parsley, oregano, ground pepper)

Directions:

1. Place all ingredients into a crockpot.
2. Cook on high for 2 hours, then reduce to low for 2 hours. I didn’t eat until next day, so all those yummy flavors mix together, but you could enjoy now, too! 🙂
